Louie and Ernie’s classic NYer is made up of “a salty crust and unusually creamy mozzarella;” the pizzeria’s sausage pies and white pies get nods from customers and pizza reviewers. Margot’s is the offspring of Adam Kuban, who had previously been the founder of pizza blog Slice. Since then, he’s kept busy running Margot’s, a pizza parlour pop-up inside Clinton Hill pizzeria Emily. The Hot Supreme at Margot’s is composed of a “credit-card–thin crust with Romano cheese, garlic-fennel sausage, pickled jalapeños and shaved red onions;” the traditionally thinner-crust pies are, according to Kuban, “large enough to share but small enough you could house one yourself.”
